This is where the period's waste collects: date, item, quantity, reason and whatever notes were left.
It's a list, not a summary, and that's the useful part: patterns show up by reading rows in sequence, not by looking at a total.
What to look for
- The same item, many times — it's over-bought or badly rotated.
- The same reason, many items — the problem is a process, not a product.
- The same day of the week — something is happening on that shift.
Over long periods the report shows the most recent and tells you how many there are in total. If you need to see them all, shorten the range.
When it's empty
"No waste in the period" can mean two very different things: that there were no losses, or that nobody recorded them. In a busy kitchen, the second is more likely.
A waste report permanently at zero, alongside frequent inventory adjustments, is the classic sign that losses are being recorded in the wrong place.
